Fermented in rum barrels for 120 hours, this coffee reveals layers of red fruit, a gently wine-like finish, and hints of ripe passion fruit. Produced by award-winning grower Juan Peña, whose thoughtful, science-led approach has helped shape modern Ecuadorian coffee, this anaerobic natural Typica Mejorado reflects both careful craft and the character of its origin.

Whole, hand-selected cherries are sealed in oak barrels that once aged rum, creating a low-oxygen environment where sugars slowly transform and deepen the coffee’s aromatics. After fermentation, the cherries are carefully dried in controlled solar rooms to preserve clarity and sweetness. In the cup, expect blackberry and cherry up front, touches of chocolate and warm spice, and a silky texture that carries through a clean, lingering finish.

The farm has become one of Ecuador’s most recognized coffee origins, known for its balance of innovation and respect for the land. Under Juan Peña’s leadership, it operates with a rare level of precision, from seed selection to drying, all designed to bring out the best in each harvest.

The climate plays a quiet but important role. Warm, sunny days and cool mountain nights allow cherries to ripen slowly, building natural sweetness and vibrant acidity. Mineral-rich soils and clean mountain water add to the coffee’s clarity and structure. The result is a profile that feels bright yet composed, expressive, sweet, and distinctly Ecuadorian.
